I met Elizabeth 25 years ago and was immediately impressed by her beautifully creative event designs. Anyone who has been to a Swift + Company event knows it the second they walk through the door. The smell of Elizabeth’s signature cheese soufflés fill a room in the best way and you know you are guaranteed a great time and meal. Although I have not seen her as much as I would like in the past 25 years, I always felt like I knew what she was up to with her glamorous parties. This week, I had the opportunity to catch up with Elizabeth, the 2020 way via Zoom, to hear more about her latest venture.
“The soufflés have been a mainstay for my catering business for the past 30 years,” said Elizabeth on starting The Fab Fête. “I have always wanted to make a little business out of shipping soufflés across the country… It’s been so exciting and so much fun to start a new company again!”
The Fab Fête – French-ish for fabulous party – offers gift-ready, freezer-to-oven soufflés in three indulging varieties: the OG “Signature Cheese;” “White Corn and Truffle;” and “Brio Trio” – a soufflé sampler divided into three sections and inspired by charcuterie board favorites. “Refill” freezer-safe bags of soufflé mix are also available to stash away for that special occasion (or to casually impress your Mother-in-Law with your weeknight cooking/ordering skills, mastered in quarantine).
Each soufflé is pre-filled in a 32-ounce ceramic ramekin ready to go straight to your freezer and refrigerator to oven and table. Preparation could not be any easier – simply thaw the frozen soufflé overnight, bake for 1 hour 20 minutes at 325˚F, and serve with a simple salad or as the star of your cheese and charcuterie board with sliced green apples, baguette, crackers, nuts, and much more.
